Raluca’s Kale Potato Soup Recipe

One of my favorite things to do is make soup. It smells great as it’s cooking, is super yummy and last for a loooooong time!

This year we planted potatoes and kale in the garden, so naturally I had to make some kale and potato soup! Hope you enjoy this simple and delicious recipe.

Ingredients:

  • 1 large or a few small potatoes, chopped
  • 1 clove garlic, minced
  • 1 bunch (8-10) dinosaur kale leaves, chopped
  • 2 or more cups vegetable stock or chicken stock
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 1-2 sprigs of lemon thyme or oregano
  • hot sauce (optional)

In a soup pot or large saucepan, heat a tablespoon of olive oil under medium-high heat.

Sautee the garlic for a few minutes until fragrant, add 2 cups vegetable stock.

Add chopped potatoes and salt.

Cover and bring to a boil, then reduce the heat to simmer.

While the potatoes are cooking, chop the kale. Place kale leaves one on top of the other and cut out the stem. Then chop the leaves vertically into strips, then horizontally to make chunks.

Add the chopped kale to the potatoes.

If necessary, add more water or stock to the pot so that it covers the kale.

Cover the pot and cook under low heat for 8-10 minutes, or until the potatoes are soft enough to pierce through with a fork and the kale is tender.

Stir in the lemon juice, and add more salt and pepper to taste.

Add in sprig of lemon thyme or oregano to add more flavour.

Add a few dashes of hot sauce if you want some spice.

This is a simple soup recipe, and can be easily modified! You can add onions, celery or carrots to the sauteed garlic. Or you can add some cooked bacon or sausage.
